Almost all of them come down to one thing: money leaking out unnoticed. Here's what happens and what to do about it.
Chicken disappears faster than shawarma sells
Fillet loses weight on the grill, and some stays on the spit. You bought 10 kg, but sales account for noticeably less.
Unclear where the money's going
Chicken is the most expensive ingredient. Without tracking, you can't tell normal shrinkage from overuse.
Recipe card and stocktaking
The recipe card states how much raw chicken goes into a portion. Every sale deducts it from stock, and stocktaking shows the real discrepancy.
Every cook fills it differently
One cook adds 120 g of chicken and 40 g of sauce, another 150 and 60. Guests are happy, but shawarma cost shifts from shift to shift.
Cost keeps shifting
An extra 20-30 g of chicken per portion, across a hundred sales a day, adds up to tens of thousands of rubles a month.
One recipe card for everyone
Quantities are locked into the recipe, and every sale deducts ingredients accordingly. If actual usage is higher, it shows up at stocktaking.
Stocktaking in a notebook never adds up
Chicken, lavash, and sauces are counted by hand and checked against records that only cover part of the sales.
Shortages with no explanation
It's unclear where the error is: in the count, in the records, or in the stockroom.
Stock counts itself
Stock updates after every sale and delivery. At stocktaking you just enter the actual count, and Crumble calculates the discrepancy for you.
Lavash and chicken run out at peak hour
Stock levels are known roughly, and orders to suppliers go out only once the shelf is already empty.
Lost sales
Items go on the stop list at the most profitable moment, and the supplier won't deliver until tomorrow.
Minimum stock levels
Set a minimum for key products — Crumble will notify you as soon as stock drops below it, while there's still time to order.

Cost per portion is the sum of everything that goes into one portion, per the recipe card. Price is calculated from cost and the margin you want on each sale.
